Health Benefits
Strawberries - Strawberries are cool, sweet and sour. They lubricates the lungs, produce fluids, strengthen spleen, relieve intoxication. They are good for dry coughs, thirst, sore throats, hoarseness, indigestion, and hangover.
Lemon Essential Oil - Use lemon essential oil to enhance the flavor of the muffins. Due to its significant limonene content, it may support a healthy digestive and nervous system.
Granulated White Sugar - Sugar is neutral, sweet, and lubricates the lungs. It produces fluids and affects the spleen. It is good for dry coughs, thirst, and stomachaches.
Brown Sugar - Brown sugar is warm, sweet and used as an energy tonic. It promotes blood circulation; counteracts or eliminates blood coagulations; affects the liver, spleen, and stomach. If you don't have brown sugar, you can use white (granulated) sugar. They both are obtained from the juice of the sugar cane.

Pour ice cream into mini ice cream containers.
Cover with lids and put them in the freezer to freeze for 2 hours or until firm.
Before serving, remove from the freezer and let it sit in room temperature for a few minutes to soften.
Hint: I like to put ice cream in mini containers for ease of serving!
Variations
Use fruit of your choice or pre-packaged frozen fruits from stores.
Equipment
Vitamix professional-grade smart blender is what I use. In addition to making ice cream, I use it to make silky smooth soy milk in only a few minutes.
These 8-oz mini ice cream containers with silicone lids are freezer safe, reusable and leak proof.
Storage
Store ice cream in the freezer for up to a month.
Top Tip
Fruits are often on sale in the summer. It's good time to buy and cut them into chunks. Measure four cups of the fruit and freeze them in freezer safe containers. They are ready anytime when you want to make some.
