Everyone says Chinese chives are very nourishing. Some people even say, "Monks are afraid to eat Chinese chives." Do you know why? Chinese chives have great benefits for human body. That is because it contains a lot of carotene and high amounts of potassium, selenium and other carbon elements.
Many people do not realize that Chinese chives contain a high amount of carotene. This is because of it is covered by green chlorophyll. If chlorophyll is not present in Chinese chives, we can imagine that Chinese chives contain a lot of carotene, which is evident in the yellow color of Chinese chives. One hundred grams of raw Chinese chives contain 330 micrograms of carotene. Therefore, Chinese chives can be called a treasure house of carotene.

Health Benefits
Carotene is the precursor of vitamin A. Most people have the ability to convert it into vitamin A after extracting carotene from the chemical substance. However, to some people, such as diabetes, they don't have the ability to convert it into vitamin A.
There are three different carotenes: α, β and γ. Among them, β-Carotene is the most efficient element converts to vitamin and is the highest utilization value used by human body. It should be noted that some yellow green leafy vegetables, such as Chinese chives, broccoli, spinach, etc., their carotene content is higher than that of carrots. And the efficiency of using root vegetables such as carrots convert carotenoids into vitamin A is less than one-quarter. About one-half of the carotene in leafy vegetables can be converted into vitamin A.
Eat the right amount of carrots has a great effect on night blindness, and has a preventive effect on colds, male infertility, etc.
However, the most remarkable thing is that β-Carotene can inhibit many cancers (such as lung cancer, bladder cancer, esophageal cancer, stomach cancer, large intestine cancer) catalyst (promotor) activities, and reduce the incidence of cancer.
Chinese chives contain powerful antioxidants oxidative selenium. Its high content is most likely the reason why "Monks are afraid to eat Chinese chives" because selenium may increase sexual desire.
Chinese chives also contain a high amount of potassium, which is very helpful for the expansion and contraction of the heart.
Each an appropriate amount of Chinese chives can increase metabolism, promote blood circulation, increase body temperature, promote gastric juice secretion and help digestion.
Chinese chives are super foods. You can buy them in bundles in Chinese/Asian supermarkets or grow them in your garden. I grow mine in a pot and cut them whenever I feel like to cook some.
Here are stories (that I gathered) of how Chinese chives may help different health issues:
Urinary Incontinence
When I came to the United States in 2002, I suffered from severe urinary incontinence, which was a hereditary problem. My mother had this problem. I tried all kinds of treatments, but none of them worked and I couldn't even walk fast.
It had been an old problem for many years, and it came and went. At the time, I was working as a nanny for a family. My employer liked the fresh seafood dumplings (stuffed with Chinese chives and other ingredients) I made, and we would eat them two or three times a week.
About a year and a half later, one day I was in a very quiet bathroom. The sound of my peeing was very loudly, like a teenager peeing. I was startled but I couldn't be happier - wow, my incontinence is gone! From the summer of 2003 to the present, it has never happened again.
At that time, I thought, how could it be gone? I didn't take any Chinese or Western medicine. Then it must be something I ate regularly. We lived in Santa Monica. To cook Chinese food, I had to take the bus to the Chinese district every week and bring the grocery back with my hands, so the things I bought were very limited. The only vegetable I often ate was Chinese chives. I went online to check the medicinal value of chives. As I expected, chives nourish kidney qi and can strengthen yang. Moreover, Chinese chives in Spring not only nourish the kidneys, but also the spleen.
Later, I told a friend that she also had hereditary urinary incontinence in her family, and her problem went away after eating Chinese chives.
Kidney Damage
Chinese chives and eggs took care of kidney damage caused by taking anti-inflammatory drugs.
I had a cold in the Spring and I suspected it was inflammation, so I took some anti-inflammatory drugs, which were clearly labeled that it would damage the kidneys. After taking the medicine, I urinated very quickly and had to go to the bathroom almost 1-2 hours later, sometimes even only half an hour later, which is extremely painful.
I thought since chive dumplings took care of urinary incontinence, they should also have a therapeutic effect on this.
So I bought a big handful of Chinese chives (about 1.5-2 pounds). I cooked some with two scrambled eggs and ate them every day. My problem went away in about 2-3 days. Just a handful of Chinese chives and a few eggs! Afterwards, whenever this happened again, I ate scrambled eggs with Chinese chives. This is tried and tested.
Swollen Legs and Feet
Scrumbled eggs and Chinese chives nourish kidney qi and took care of the swollen legs and feet caused by diabetes.
On April 3, 2007, I picked up my employer's guest from Los Angeles International Airport. She came in a wheelchair because her legs and feet were swollen, making it difficult to walk, and she was skinny.
The next morning I discovered that the guest staying on the first floor had pooped everywhere, from her bedroom to the bathroom in the living room, as well as the hallway. (She didn’t realize that her bedroom had a bathroom!)
I didn't know what's wrong with her because she was a little delirious. But my first reaction was: She is a person who has been hungry for a long time. She ate too much food last night and injured her spleen.
Chinese chives in Spring can nourish the spleen and kidneys. I bought Chinese chives and gave her a meal of scrambled eggs with the chives every day. At the time I didn't know that she was a high-risk diabetic, and I didn't understand diabetes. I didn't know until day 4.
I took her to see a doctor and her blood sugar was 466. She started taking decoction from the 5th day. But what I didn't expect was that after five and a half days, the swelling in one of her legs subsided, and on the sixth day, the swelling in the other leg also subsided. Not only could she walk, she could also go upstairs. After living here for more than a month, she gained weight and became stronger, and she wanted to help me doing house chores.
Spleen and Kidney Yang Deficiency
Scrambled eggs with Chinese chives took care of swollen legs and feet due to spleen and kidney yang deficiency.
In the summer of 2010, I went to Shanghai to watch the World Expo. Because the weather was very hot and humid, I drank ice-cold beer, indulged in food and ice-cold watermelon.
The next day my legs and feet were swollen and I wasn't urinating. This was the first time I had this symptom and I was very scared. Because I was traveling with a tour group, I had no freedom. At night I soaked my feet in hot water and gave myself a meridian massage. Finally I urinated in the morning.
But the swelling in my legs and feet didn't go away. I used to wear size 7 shoes, but after my feet swelled, I had to buy a pair of size 10 men's slippers. When I returned to California, I ate scrambled eggs with Chinese chives for three days in a row, and the swelling in my legs and feet subsided.
According to Western doctors, these health issues are incurable! But a simple Chinese chives diet took care of these health issues.
People with the above health issues may wish to try it. It doesn’t cost much, but miracles may happen!
