Have you wondered how to make Fluffy White Rice without standing in front of the stove watching for the rice not to boil over or get burned? Well, as Confucius said, "To prepare a good work, one must first sharpen his tools (工預善其事,必先利其器)." Tatung rice cooker is the tool to make the best, soft and fluffy white rice!
Rice is a staple in Asian households and this soft and fluffy white rice is so easy to make. Serve it with Sweet and Sour Chicken or any other amazing recipes.
Ingredients
- long grain rice
- or, short grain rice
The rice in the top bowl is long grain rice. Almost all the restaurants in North America serve long grain rice. I grew up having short grain rice (in the bottom bowl) and to this date, I still prefer short grain rice. As shown in the photo above, short grain rice is shorter and rounder. After it's cooked, it is softer and tends to stick together more than the long grain rice.

- White Rice - is neutral, sweet, used as an energy tonic and a spleen tonic. It affects the spleen and stomach.
Instructions
Measure 2 cups of rice and pour into the inner pot.
Fill the inner pot with water, cover the rice and stir slightly. Discard the water.
Fill the inner pot with water to the water level line marked at 2.
Fill the measuring cup with water to the second water level line.
Pour the water into the outer cooker.
Place the inner pot into the outer cooker and plug in the rice cooker.
Cover the cooker and press the switch level down. The red light will appear. The light will go off when it's done, but do not lift the lid. Leave the rice in the cooker, covered, for 10-15 minutes.
Use a spatula to fluff up the cooked rice.
Transfer to a bowl and serve.
Hint: This Tatung rice cooker cooks up to six cups of rice. This recipe uses two cups. If using three cups of rice, put water to level three for both inner pot and the measuring cup. If using five cups of rice, use water to level five, etc.
Variations
If using brown rice, soak it in water for two hours before cooking.

- 2 cups water
Instructions
- Use the measuring cup come with the Tatung rice cooker. Measure 2 cups of rice and pour into the inner pot.
- Fill the inner pot with water, cover the rice and stir slightly. Discard the water.
- Fill the inner pot with water to the water level line marked at 2. Level the rice by moving the inner pot back and forth on the counter or a flat surface.
- Fill the measuring cup with water to the second water level line. Pour the water into the outer cooker.
- Put the inner pot into the outer cooker. Plug in the rice cooker.
- Cover the cooker and press the switch level down. The red light will appear. The cooker will turn off automatically when the rice is done. Do not remove the lid. Leave the rice in the cooker for about 10-15 minutes to complete the steam cooking.
- Use a spatula to fluff up the cooked rice while it is still warm.
