How to Cook Scrambled Eggs with Chinese Chives
Wash the chives and cut them into 1 inch long.

Remove the eggs to a plate and set aside.

Hint: Chives are not resistant to heat, so don't cook them for too long.

Ingredients
- 50 grams Chinese chives
- 2 eggs
- ⅛ teaspoon salt or to taste
- 2 tablespoon vegetable oil
Instructions
- Wash the chives and cut them into 1 inch long.
- Crack the eggs into a bowl and beat them well.
- Put one tablespoon of oil in the wok. Heat the oil using high heat. Add the egg mixture, stir-fry until the eggs are puffy and just set. Remove to a plate and set it aside.
- In the same wok, add a tablespoon of oil. Cook the chives for 1-2 minutes. After frying, put the cooked eggs back in, mix lightly and add salt.
- Remove to a plate and serve it with Fluffy White Rice.
